Kim’s Plate – Shrimp Cocktail with a Mexican Twist

I could not resist sharing this recipe! Shrimp cocktail is a popular favorite and this one is easy to make and presents beautifully! And no cooking to get us through the last weeks of the hot summer. No stove, no oven! Delish!

½ cup ketchup

¼ cup freshly squeezed lime juice

¼ cup hot sauce (optional)

1/3 cup olive oil

½ avocado cut into small chunks

10 shrimp, shelled, deveined and cooked (precooked frozen shrimp are great!)

½ Pico de gallo

Salt and pepper to taste

Tortilla chips

Whisk ketchup, lime juice, optional hot sauce, salt, pepper and olive oil in a medium bowl. Add remaining ingredients and stir gently. Spoon into cocktail glasses and chill. Serve with tortilla chips.
