LifeScape Quinoa Chicken Soup [Recipe]

This quinoa chicken soup is packed with yumminess and lots of nutrients! Quinoa is a very protein-rich grain, contains almost twice as much fiber as most other grain, contains iron, lysine, magnesium, vitamin B2 and has a high content of manganese.

This soup is not only delicious and nutritious, it is quite easy to make! Use a slow cooker and all you have to do is put the ingredients in and you have soup in a few hours!

Ingredients:

3 large chicken breasts, thawed
1 cup uncooked quinoa
7 cups of chicken stock
5 large carrots, sliced
1 tsp parsley
2 cloves garlic, crushed, 1 tsp salt
1 tsp pepper
2 tsp seasoning salt
1 bay leaf

Instructions:

  • Place all ingredients in a large slow-cooker and cook on high for about 3 hours.
  • Remove chicken breasts and shred using a fork. Place shredded chicken breasts back in pot and let cook for another 30 minutes.
  • That's it! Enjoy!
